ORGANIC SWISS WATER DECAFS	The 100% chemical free Swiss Water decaffeination process begins with the soaking of high quality green, unroasted, organically grown coffee beans in pure clean water to create what we call "flavor saturated water". The beans are set aside while the flavor saturated water is run through a carbon filter to remove only the caffeine molecules. Once decaffeinated, the flavor saturated water is run back over the original green coffee beans thus restoring their flavor. The 97% caffein free coffee beans are then dried returned their original bags. Decaf Komodo Blend - This decaffeinated coffee blend of Sumatra, Timor and Peruvian has proven itself to be the best on the market. The coffee is decaffeinated in its green bean state, before the delicate oils are developed through roasting, leaving the original tastes and aroma in the beans for a rich and satisfying cup. Details To top of page	Coffee beans contain volatile oils that easily go stale if they are exposed to air or warm temperatures for long. Storing your beans in the freezer can retain their freshness for up to a month. Grind only the beans that you need at the moment of brewing and you will have a much better cup of coffee. A note about terminology: French Roast In spite of is name, this is not a coffee from France: it is simply a type of dark roast. The bean has a dark brown appearance with an oily surface, producing a brew that is bittersweet and low in acidity. Taste varies with bean type. Vienna Roast is the lightest of the dark roasts, with a greater expression of flavors. Typically the bean has a drier, less oily look. Patti Spooner, owner of Alta Coffee, has been roasting earth-friendly coffee beans since 1984.
